Cookie Truffles!

Look how magical these cookie truffles look in this photo from Pampered Chef! Mine didn't turn out QUITE like this but I am damn proud of them!!! I made the vanilla-almond variety and James can't stop raving about them. Below is the recipe for crème de menthe, peanutty-chocolate and vanilla-almond cooke truffles... MMMM! They were relatively easy as well. I did some Christmas baking on the weekend and I wanted to do something a little out of the norm and make homemade truffles! Here are what mine ended up turning out like:
Well.. ONE of them is a masterpiece. The rest are... SANTA HATS!
Crème de Menthe Cookie Truffles
15 creme-filled chocolate-mint sandwich cookies
2 oz. (60 g) cream cheese, softened
1 pkg. crème de menthe chocolate candies (unwrapped- about 28 total)
1/4 cup semi-sweet chocolate morsels

Break cookies in half and place into Manual Food Processor OR a food processor you have and process until cookies are very fine crumbs. Add cream cheese; process until dough forms. Using a small spoon scoop cookie mixture and form into small balls. Place on a pan lined with parchment paper.
2. Microwave chocolate candies, stirring every 15-30 seconds until melted. Cool slightly. Dip truffles in chocolate; place onto pan. Let stand 5 minutes or until the chocolate is set.
3. Microwave chocolate morsels, uncovered, on HIGH 30-60 seconds or until melted. Spoon chocolate into a resealable plastic bag, trim corner of bag and drizzle chocolate over truffles. Let stand 10 minutes or until chocolate is set. Store truffles in an airtight container in the refrigerator.
Vanilla- Almond Cookie Truffles
Substitute creme-filled vanilla sandwich cookies (white Oreos!) for the chocolate-mint sandwich cookies. Add 1/2 tsp. almond extract to cookie and cream cheese mixture. Process and shape truffles as directed in Step 1. Omit crème de menthe chocolate candies. Roll truffles in 1/2 cup toasted, finely chopped almonds. Substitute white chocolate morsels for the semi-sweet chocolate morsels in Step 3.
Peanutty-Chocolate Cookie Truffles
 Substitute 12 peanut butter sandwich cookies for the chocolate-mint sandwich cookies. Increase cream cheese to 3 oz. (90 g). Process and shape truffles as directed in Step 1. Omit crème de menthe chocolate candies. Roll truffles in 1/2 cup finely chopped dry-roasted peanuts. Drizzle with melted semi-sweet chocolate morsels as directed in step 3.
