Cookies & Cream Cheesecake Bites


 We had a dinner party last night and I started my day in the kitchen with these SUPER yummy bite sized sandwich cookies that use Oreo's as the base and sides. This is a Pampered Chef recipe that can be found in the Simply Sweet cookbook that has over 56 awesome desserts to choose from. I wanted something cheesecake-esque for dessert as cheesecake is James' favorite and this dessert was a bit unusual. I liked that these didn't take too many ingredients and still looked really fancy. Hope you enjoy these as much as my guests did last night- they were gobbled up really quick!
2 squares (1 oz/30 g each) semi-sweet chocolate for baking, chopped
1 pkg. (8 oz/226 g) miniature Oreo's, divided
1 pkg. cream cheese (8 oz/250 g), softened
1/4 cup sugar
1/2 tsp. vanilla
1 egg
1. Preheat oven to 325 degrees. Melt chocolate in microwavable bowl and set aside to cool. Place paper liners in mini muffin pan or spray with nonstick cooking spray. Separate 60 cookies into halves. Place one cookie half, imprinted side down, into bottom of each cup. Line sides of each cup with four cookie halves, imprinted sides against sides of cups. Chop remaining cookies and set aside.
2. In a mixing bowl mix cream cheese, sugar and vanilla until well blended. Add egg; mix well. Stir in cooled chocolate and 1/4 cup of the chopped cookies. Using a small scoop or spoon fill each cookie-lined cup with a rounded scoop of batter. Sprinkle batter evenly with remaining chopped cookies.
 3. Bake 18-20 minutes or until filling is almost set. Remove pan from oven and cool 10 minutes. Refrigerate at least one hour or until ready to serve.
