Chicken Mole Pizza!


TGIF! Happy Labor Day Friday to you. I have a recipe that is hot off the press from Pampered Chef- their new chicken mole pizza. We tried it out last night and really loved the avocado on the top and Mexican flavor. The tomatoes are from our garden take a look at how many I harvested:
Here is the brand new recipe. Hope you enjoy it:
2 cups corn chips
1 pkg. refrigerated pizza crust - I always use Pillsbury
1 small onion
1-2 limes
1 can (8 oz/156 mL) unsalted tomato sauce
3 Tbs. Mole Rub
2 cups diced, cooked chicken breasts
1 1/2 cups shredded mozzarella cheese
1 ripe avocado
2 plum tomatoes or a few cherry tomatoes
1/2 cup loosely packed fresh cilantro (optional)
Preheat oven to 425 degrees. Place corn chips into large resealable bag; press to crush chips. Unroll dough on bottom of pan and sprinkle crushed chips evenly over dough; press to adhere.
Bake 8-10 minutes or until crust is light golden brown.
Meanwhile coarsely chop onion and juice limes to measure 1 Tbs. Combine lime juice, tomato sauce and rub and mix well. Add onion and chicken.
Remove pan from oven and top crust evenly with chicken mixture and cheese.
Bake 8-10 minutes or until crust is a deep golden brown and cheese is melted. Remove from oven.
Meanwhile, dice avocado, tomatoes and cilantro, if using. Top pizza evenly with all three. Enjoy!
