Peanut-Crusted Pork Satay


Mmmmm this recipe is one of my favorite summer time BBQ meals! It has a really delicious peanut sauce and is a great use for pork tenderloin. We make it a lot for when company come over and often serve it in lettuce wraps with some julienne carrots and additional peanuts. It is a Pampered Chef recipe and some of my customer's favorite! Here is the recipe:
Marinade and Sauce
1/4 cup soy sauce
2 Tbs. fresh lemon juice
2 Tbs. vegetable oil
2 Tbs. packed brown sugar
3 garlic cloves, pressed
1/4 tsp. cayenne pepper
1/4 cup chopped fresh cilantro (optional)
2 Tbs. creamy peanut butter
1 Tbs. water
1 pork tenderloin (1 1/4 lb/625 g)
12 bamboo skewers soaked in water (we sometimes will just grill too)
1/4 cup dry roasted peanuts, finely chopped
1. Prepare grill for direct cooking over medium-high heat. For marinade, whisk soy sauce, lemon juice, oil, brown sugar, garlic, cayenne pepper and cilantro in a bowl. Pour 1/4 cup of the marinade into a separate bowl and add peanut butter and water; whisk well and set aside for serving as sauce. Set remaining marinade aside.
2. For pork, trim silver skin from pork. Slice pork lengthwise into two strips. Thinly slice strips crosswise; place into remaining marinade. Turn pork to coat; cover and refrigerate until ready to grill
3. Remove pork from marinade; discard marinade. Evenly thread pork onto skewers. Grill skewers 5-6 minutes or until grill marks appear, outside of pork is deep brown and pork is barely pink in center, turning once. Remove from grill. Press one side of skewers into peanuts and serve with peanut sauce and/or lettuce wraps.
