Jamaican Jerk Sliders!


My girlfriend Courtney and her boyfriend came over for dinner on Saturday and she brought these delicious Jamaican Jerk sliders as an appetizer.. Yum!!! We have never really hung out just the four of us but have always wanted to do a double date so it was a fun night. The sliders were really spicy and had a great mango salsa to cool your mouth down. We gobbled these up immediately. She even found little slider ciabatta buns at Super Store! Here is the recipe :D 
3 tablespoon Jamaican Jerk seasoning
3 tablespoon extra-virgin olive oil
1 teaspoon each of salt and ground pepper
2 bone-in chicken breast (skin removed)
4 bone in chicken thighs (skin removed)
1 cup brewed coffee
3 table spoon fresh lime juice
3 tablespoon molasses
2 tablespoon seeded and minced jalapeno peppers
1 tablespoon minced garlic
Rolls, or buns
1 package of coleslaw
2 fresh mangos
½ cup sour cream
½ cup mayo
3 table spoon fresh lime juice
1 teaspoon minced garlic
1 teapsoon salt or pepper
Combine jerk seasoning, oil, salt and pepper in a bowl. Coat chicken with seasonings. Place chicken pieces, bone side down in a slow cooker. Stir coffee, lime juice, molasses, jalapeno and garlic for the sauce in a measuring cup. Add sauce to the slow cooker, Cover; cook on low heat setting for 4-5 hours.
Remove chicken from slow cooker, remove and discard all the bones, then shred the chicken. Return to slow cooker to absorb sauces. Serve on buns with mango coleslaw.
The table set all purdy... I made beef dip, potato salad and corn on the cob. Yummm!
