Double Chocolate Mousse Cups

 Mmmmm this recipe is one of my all time favorites from Pampered Chef... You have to try these!!! They are SO simple and I have made them for a few dinner parties and they are a really big hit... Hope you enjoy them as much as I do :)
Ingredients:
Waffle Cups
1/2 cup semi-sweet chocolate chips
1 pkg. prepared waffle bowls (I found them at Safeway but Sobey's doesn't carry them)
Mousse & Garnish
1/2 cup white chocolate chips
1 cup cold milk (2% works best)
1 pkg. white chocolate or vanilla instant pudding and pie filling
3 cups thawed, frozen whipped topping
3 Tbs. sliced almonds, toasted
1/2 pint fresh raspberries
Directions:
1. For waffle cups, place 1 cup semi-sweet chips in microwavable bowl and microwave on HIGH for 60-90 seconds or until melted and smooth, stirring every 15 seconds. Dip pastry brush into chocolate and swirl around inside of waffle bowls, replenishing brush with chocolate as necessary.
2. For mousse, place white chocolate chips into another microwavable bowl and microwave on HIGH for 60-90 seconds or until melted and smooth, stirring every 15 seconds. Combine milk and pudding mix in glass/stainless bowl and whisk until thickened. Add melted white chocolate; whisk until smooth. Fold in whipped topping.
3. Coarsely chop almonds. To assemble cups, spoon mousse into large resealable plastic bag. Trim corner of bag and using a circular motion, pipe mousse evenly into cups. Sprinkle mousse with almonds and top with raspberries.
