Creole Shrimp & Cucumer Canapés


From Wikipedia: A "canapè" is a small, prepared and usually decorative food, held in the fingers and often eaten in one bite. It seems as though many appetizers contain carbs and dairy it's hard to find a lighter appy- especially for a pizza night like we were having for my family on Sunday. I wanted to make something that did not have bread, crackers or cheese since we would be getting our fill with the pizza and made this awesome Pampered Chef appetizer. They are SO easy and impressive. Our guests loved them and they look so fancy... Here is the recipe!
1/2 cup Ketchup
1 Tbs. finely chopped onion
1 Tbs. finely chopped green bell pepper
1 Tbs. finely chopped celery
1/4 tsp. hot pepper sauce
4 oz. cream cheese, softened
1 seedless cucumber
24 cooked medium shrimp (41-50 per lb.), peeled, deveined, tails removed
2 Tbs. finely chopped fresh parsley
1. Combine ketchup, 1 Tbs of the rub, onion, bell pepper, celery and hot sauce in small mixing bowl. 
Combine cream cheese and remaining rub in small mixing bowl; mix well.
Place cream cheese mixture in a piping bag or decorator bottle.
2. Cut cucumber on a bias into twenty four 1/4-inch-thick slices.
Pipe cream cheese mixture evenly over centers of cucumber slices.
Place shrimp over cream cheese mixture; spoon cocktail sauce over shrimp & garnish with parsley.
