Chocolate Peanut Cookies


 FOODGASM! And it's Friday... And that means it's deserving of a decadent recipe... Mmmmm... Hope you enjoy these as much as we did! Thanks for the recipe Karen!!!

Makes 12
¼ cup plain flour
¼ cup cocoa powder
¼ tsp baking soda
¹/8 tsp salt
¹/3 cup margarine
¼ cup sugar
1 egg white
¼ tsp vanilla extract
170g dark chocolate (at least 70% cocoa solids), chopped

¼ cup dry roasted, unsalted peanuts
1. Preheat oven to 350˚F. Mix flour, cocoa, baking soda and salt. Beat margarine and sugar in a large bowl until creamy. Beat in the egg and vanilla. Gradually add flour mixture and beat until just combined. Mix in the chocolate and nuts. 

2. Drop 2 tbs of dough onto an ungreased biscuit sheet, with around 5cm between each cookie. Bake for 12 minutes or until just set, being careful not to overcook.

3. Cool for about five minutes. Remove from sheet to a wire rack. Cool.
