Coffee Swirl Brownies.. Mmmmm

on

We had a dinner party on Friday night and I made these HEAVENLY brownies for dessert! Our guests said they were the BEST brownies they have ever had... YAYYY! They are actually a Pampered Chef recipe out of the "Simply Sweet" cookbook and I've made them a few times as I normally have all of the ingredients on hand. Hope you enjoy them as much as we did!

Ingredients:
Brownie Batter:
1 cup butter
1 pkg (12 oz/350 g) semi-sweet chocolate morsels
4 squares (1 oz/30 g each) unsweetened chocolate for baking, chopped
1 1/2 cups all-purpose flour
2 tsp. baking powder
4 eggs
1 cup sugar
1 Tbs. vanilla
1 Tbs instant espresso granules

Cream cheese filling:
4 oz (125 g) cream cheese
2 Tbs. sugar
2 Tbs. Irish Cream liqueur
1 egg yolk

Directions:
1. Preheat oven to 325 degrees. Line large cookie sheet with parchment paper, allowing 1 inch to extend past sides. Lightly spray with nonstick cooking spray and set aside. Place butter, chocolate morsels, and chopped chocolate into a large microwavable mixing bowl and microwave on HIGH 1-3 minutes or until smooth, stirring every 30 seconds. Cool slightly.
2. Combine flour and baking powder in a separate mixing bowl. Whisk together eggs and sugar and another bowl. Place vanilla and espresso granules in small bowl and stir until espresso is dissolved. Whisk into egg mixture. Slowly add chocolate mixture to egg mixture, whisking constantly until blended. Fold flour mixture into chocolate mixture until just combined. Pour batter into prepared pan, spreading evenly.
3. Place cream cheese in microwavable bowl and microwave on HIGH 30 seconds or until soft. Whisk in sugar, liqueur and egg yolk; whisk until smooth. Drop scoops of cream cheese filling over brownie batter and gently swirl brownie batter and filling creating a marbled effect.
Before baked
4. Bake 32-35 minutes or until wooden pick comes out with moist fudgy crumbs attached. Cool completely in the pan and once cool lift parchment and brown from pan.
