White Chocolate Macadamia Nut Cookies


My husband's favorite cookie is white chocolate macadamia nut and I have not made them until this weekend.. OMG this recipe is delicious! I love the crunch that the nuts give to this cookie... Yummmmm... Here is the recipe I used and it was a huge hit:

1 cup butter, softened
3/4 cup packed brown sugar
1/2 cup white sugar
2 eggs
1/2 tsp. vanilla extract
1/2 tsp. almond extract
2 1/2 cups all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 cup coarsely chopped macadamia nuts
1 cup coarsely chopped white chocolate (or white Chipits!)

1. Preheat oven to 350 degrees
2. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the eggs, one at a time, then stir in the vanilla and almond extracts. Combine the flour, baking soda, and salt; gradually stir into the creamed mixture. Mix in the nuts and chocolate. Drop dough by teaspoons full onto ungreased cookie sheets.
3. Bake for 10 minutes in the preheated oven or until golden brown
I love using a cookie scoop like this one so that all of the cookies are the same size and are easily scooped onto the pan.
I did a test and cooked them on both a metal sheet pan and the stoneware... They were essentially identical except the stoneware seemed to be more nonstick and was easier to clean
