Tiramisu Bites!


Pampered Chef comes out with a new selection of recipes every 6 months and this season they are doing the theme "Italian Made Easy"... With it came this REALLY yummy recipe that I made last night for a dinner party. Everyone LOVED them!!! They do taste like tiramisu but also almost like a cheesecake bite. YUM!

Chocolate bottoms:
1 small package (250 g) Devil's Food Cake Mix
1 egg
1 Tbs water
1 Tbs instant coffee granules
1/3 cup coffee flavored liquor
1 (250 g) package cream cheese, room temperature
1/4 cup powdered sugar
2 tsp. vanilla extract

1 1/2 cups thawed whipped topping


In a mixing bowl combine Devil's Food Cake mix, egg, water and instant coffee. Mix well. Divide equally into mini muffin pan and bake for 8-10 minutes at 350 degrees.

Meanwhile mix cream cheese, powdered sugar and vanilla and place into a resealable bag.
Place thawed whipped topping into a resealable bag and set aside.

Once a toothpick comes out clean when inserted to the cakes you will know the cakes are ready. Place them on a cooling rack and use a mini tart shaper such as this one to slightly indent each cake.

Cool for 2 minutes and remove from pan. Lightly brush each cake with the coffee liquor.

Take the cream cheese filling and cut a corner out of the plastic bag and pipe filling into cakes in equal amounts.

Finally pipe the whipped topping over the cream cheese filling and sprinkle with unsweetened cocoa powder if desired.
