Deviled Eggs

As my good friend and chef Aman would say- underrated comfort food! Deviled eggs are an easy appetizer or picnic addition and can look really fancy if you pipe the egg filling in a cool pattern like this:


There are so many different variations on this traditional classic... Smoked salmon goes very well with deviled eggs or even some of the following: pesto with deviled eggs, bacon, tuna, chive-tarragon, spicy, "Tex Mex", lobster deviled eggs, etc etc!

Here is my recipe... Enjoy!!!

Ingredients

  • 6 hard-cooked eggs
  • 2 tablespoons mayonnaise
  • 1 teaspoon sugar
  • 1 teaspoon white vinegar
  • 1 teaspoon prepared mustard
  • 1/2 teaspoon salt
  • Paprika

Directions

  1. Slice eggs in half lengthwise; remove yolks and set whites aside. In a small bowl, mash yolks with a fork. Add the mayonnaise, sugar, vinegar, mustard and salt; mix well. Stuff or pipe into egg whites. Sprinkle with paprika. Refrigerate until serving.
