I've really been craving Mexican lately and on a hot day there is nothing more cooling and delicious than a fresh batch of guacamole!!! I've been working hard to find a recipe that is easy and can be duplicated often with ingredients I normally have in the fridge.. Here is my recipe for some really fresh tasting guacamole:

2 ripe avocados, mashed (soft when squeezed... if you have some avocados that need ripening try leaving them in the bowl of apples- by the end of the day the avocados should be ripe)
1 diced tomato
1/2 diced red onion
1 or 2 jalapeno's, depending on how spicy you would like it, diced
2 Tbs. of fresh lime juice
salt and pepper to taste. 

Combine all ingredients and serve with nacho chips or pita bread... Guacamole is also great on quesadillas, chicken or even on pizza!

In order to properly cut an avocado slice the avocado in half and pop the pit out. Then you can create a grid with a BUTTER knife (so you don't cut your hand) and use a spoon to scoop out the soft green flesh like this:
