BEST Yorkshire Pudding!

TGIF! Weekend cooking always reminds me of my favorite meal that my mom makes: prime rib with roasted potatoes, cheesy vegetables, mashed potatoes and YORKSHIRE PUDDING! Here is an awesome recipe from my father in-law for flawless yorkshire's that won't use up all of the drippings from your roast:

Ingredients:

  • 4 eggs
  • 1 tsp. salt
  • 3 Tbs. Canola oil
  • 3 cups milk (2% or higher)
  • 2 cups all-purpose
Blend the eggs, salt and oil together in a blender with the milk. Then, leaving the blender on medium high to high speed, slowly add the flour until the mix is about the consistency of thick cream. You may need a little more flour or milk to get it just right. Grease a muffin tin liberally with butter, then put into a preheated 450 degree oven for a minute to melt the butter. Pour the mix from the blender into the hot muffin fun. Fill the wells about half full.
Cook for about 5 minutes, then turn down the oven to 375 degrees for 10 more minutes. Do not open the oven door to check on your popovers/yorkshires since that will make them deflate!

When they are golden brown on top and have risen well, remove from the oven. Let cool for a minute as they will be easier to remove from the pan.

Enjoy with hot gravy poured over top! MMMMMM!
